The week for our Bread Baker's Apprentice Challenge we made English Muffins. I've always loved English Muffins and prefer them over toast any day! I make English Muffins all the time and have two recipes on my blog both with excellent results. To see the recipes please click here and here.
I did change Reinhart's recipe and added about 1/2 c. sourdough starter and I used kefir instead of milk.

Chicken Salad is one of my favorite sandwiches and I can't think of anything better then a Chicken Salad and Tomato Sandwich on a toasted Sourdough English Muffin! And to make this sandwich even better, I used our first picking of tomatoes out of our garden! It was delicious!

Google Books has the entire book, "The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread", by Peter Reinhart, scanned and you can find the recipe on Page 157 by clicking here.

Please feel free to visit some fellow BBA'ers and see their interpretation of this recipe.

WOW, they look perfect. :) Great job. Sourdough is a great idea.
Thanks for mentioning my blog.
Google books does have some pages missing in the book but a lot of it is there. :o)
Have fun and nice baking along with you,
Susie
Gorgeous! Love the pictures!
Looks awesome! Loving the fresh tomato idea. How much sourdough starter did you add?
I will have to lick the screen. Until our heat wave is over the oven will not be going on.
Ive always wanted to try making my own English Muffins - yours turned out so beautifully :)
Those english muffins look fantastic. I bet the sourdough starter added an amazing tangy dimension. The photos are making me hungry.
omgosh! I love english muffins but never even considered making them from scratch. Yours look amazing. Id really like that chicken salad sandwich for lunch.
They look wonderful! I haven't made Peter's yet, but I made some whole grain ones last month. I had better hurry up and make these!
What a great post! First of all, I'm going to go out on a limb and say that I adore english muffins. I will go so far as to say they are better than a biscuit : ) The pics are fabulous and they look terrific, especially with your homegrown tomatoes. Thanks also for sharing the bit about the BBA being completely on google. No one around here has the book for sale.
Wow! Great looking muffins! Can't wait to bake these now!
Those are the best English muffins I've seen! Perfectly cooked and golden. Very nice!
I agree with haleysuzanne - those are the best looking English Muffins ever!
OMW those look so perfect...how am I ever going to do anything like that when I get to that week??? I would eat anything with these English muffins...but that chicken salad looks like a really good place to start.
Those look great! I don't think I've ever used an English muffin for a sandwich. I'll have to try it.
Cant wait to make these! But all this bread and so little time! Happy baking!
Beautiful looking muffins! Great job ...
Wow, those look amazing! I'm so in awe of those of you in the group using your starters with various bread. I wouldn't have a clue how to go about that.
Well done!
